Innovative perspectives and uses of minor cereals grain (einkorn, emmer, sorghum, barley, triticale, tritordeum) are also tested both for traditional-zootechnical use and for direct gluten-free or low gluten food use (food-grade). The maintenance, characterization and qualitative-quantitative enhancement of a collection of hulled grains (emmer and spelt) in adherence to the Genetic Resources Project - FAO is also active. Since 1974 the Center has been coordinating the National Durum Wheat Network by tests carried out following common protocols (40 cultivars in about 50 Italian locations, on average) which allow to obtain productive and qualitative information about varieties in the different cultivation areas, fulfilling also the needs of the food transformation industry.
