The infrastructure allows to study the nutraceutical quality of foods and to perform a biological validation in terms of antioxidant, anti-inflammatory and lipid-lowering effects. The infrastructure uses different analytical approaches to assess the characteristics of foods: ORAC (oxygen radical absorbance capacity) to measure the total antioxidant capacity of food; CAA-RBC (cellular antioxidant activity-red blood cells) to measure the antioxidant capacity of foods in a cellular biosystem; determination of single bioactive components by HPLC; concentration of polyphenols, flavonoids, anthocyanines is determined by a spectrophotometry; toxicological studies based on mutagenesis tests; cell cultures (Caco.2 cells, hepatocytes, endothelial cells, endothelial progenitor cells) and animal models (mouse, rat, pig) to investigate in vitro and in vivo bioactive effects and action molecular mechanism of nutraceuticals and functional foods on health.
