The Proteomics & Metabolomics Lab can tackle a huge array of applications associated with Food Chemistry and Human Nutrition: i) Characterization of food quality and food composition analysis, including nutrients and nutraceuticals (mono- and oligosaccharides, vitamins, saturated and unsaturated fatty acids, amino acids, peptides, carotenoids, polyphenols). ii) Safety of food products towards organic contaminants – from the environment and technological processes (pesticides, mycotoxins, PCDDs, PCDFs, acrylamide, alkaloids, emerging contaminants). iii) Contaminants migration from the environment of production and along the food chain, including monitoring of processing contaminants. iv) Food products authentication (synthetic vs. natural, organic vs. conventional) and determination of geographical origin.
